In the marine and fisheries sector, amplang (rice crackers) manufacturing businesses often implement these guidelines to maintain product quality and prevent contamination. The amplang manufacturing process involves several crucial steps: receiving raw materials, filleting, milling, mixing spices and flour, molding, frying, draining, sorting, and packaging. Research has identified several aspects that require improvement, including building structures and facilities, production equipment, hygiene and sanitation facilities and activities, food labeling, record-keeping and documentation, employee training, and improvements to packaging. Specific actions to address these include upgrading building materials to meet hygiene requirements, replacing or maintaining equipment to prevent contamination, installing or improving handwashing and sanitizing stations, updating food labels to comply with regulations, establishing thorough record-keeping practices, providing regular employee training on hygiene standards, and enhancing packaging to better protect the product. Overall, the implementation of GMP and SSOP is still suboptimal and requires improvement to ensure the product is safe and meets food safety standards.
Deca Endy Rey Copyright (c) 2025 deca endy rey https://creativecommons.org/licenses/by-sa/4.0 http://pakisjournal.com/index.php/jfmas/article/view/736 Thu, 20 Mar 2025 00:00:00 +0000 Application of Net Production of Fishery Products in Fish Cracker Processing in Parit Baru Village, Selakau District, Sambas Regency http://pakisjournal.com/index.php/jfmas/article/view/724
Abstract. Clean production is a preventive approach in environmental management that aims to minimize waste and improve resource efficiency without sacrificing product quality. This study aims to evaluate the application of the principle of clean production in a household-scale fish cracker processing business unit in Parit Baru Village, Selakau District, Sambas Regency. The research uses a qualitative descriptive method with data collection techniques through direct observation, in-depth interviews, and visual documentation. The results showed that organoleptically the fish crackers produced had good quality with a uniform color appearance, a non-pungent aroma, and a crispy and chewy texture. However, from the results of the assessment using the CPPOB-IRT form, 26 discrepancies were found divided into minor, major, serious, and critical categories, especially in the aspects of sanitation, employee hygiene, building conditions, and production documentation. Narrow production space, non-one-way process flows, and lack of sanitation facilities are the main challenges. There is no raw material recording available and there is no defective product recall procedure. The results of the study show that the application of the principle of clean production and strengthening the quality system is still very necessary. With simple intervention and continuous assistance from related agencies, the product quality and competitiveness of the fish cracker household industry have the potential to be significantly improved. This study was conducted through direct observation and interviews using a checklist made by SSOP and GMP. The results of the study indicate that the implementation of SSOP and GMP is still not ideal, and there are still many aspects that need to be improved. Although the industry has a P-IRT permit and is located close to the source of raw materials, there are several problems that hinder the implementation of SSOP and GMP. These include the layout and cleanliness of the production building, inadequate sanitation facilities, process control and documentation, water supply quality, employee hygiene, and management of production equipment. Improvements in these elements are essential to improve production safety. Improving the understanding of business owners and employees about the importance of implementing SSOP and GMP is also an important part of the improvement effort. To meet food safety standards and ensure product quality, improvements are needed in various aspects. To ensure the safety and quality of mackerel fish crackers products, this study suggests better implementation of SSOP and GMP.
Mulpi Iman Saputra, Nurleli, Rifky Kurniawan, Vika Dwi Pratiwi Copyright (c) 2025 Mulpi Iman Saputra, Nurleli, Rifky Kurniawan, Vika Dwi Pratiwi https://creativecommons.org/licenses/by-sa/4.0 http://pakisjournal.com/index.php/jfmas/article/view/723 Thu, 20 Mar 2025 00:00:00 +0000 Productivity Analysis of Trammel Net Fishing Business in Arung Parak Village Tangaran District Sambas Regency http://pakisjournal.com/index.php/jfmas/article/view/595
The Trammel net is a type of gill net fishing gear that has three layers of gill nets with the aim of cathching demersal fish and shrimp. The research method uses qualitative and quantitative approaches. The results of the research show that the STIBA Makassar campus has demonstrated its commitment to water conservation management through the efforts made which have resulted in several water management efficiencies. From the data that has been obtained, it can be seen that several steps have been taken to managing water well, such as using Waste Water Treatment Plants (IPAL), managing kitchen waste water, maintaining open green land and tree planting movements. The additional use of biopores in front of the Anas bin Malik Mosque also shows awareness of the importance of managing waste water or rain effectively. Meanwhile, the plumbing system shows that the efficiency of the plumbing system that has been implemented in accordance with the SNI 8153:2015 standard shows good steps in maintaining the quality of the plumbing system on campus. It was found that there were 8 elements that had not been fully implemented, such as Backflow Preventing Devices, Traps Under Buildings, Position of Standpipes, and others. Research recommendations include strengthening sustainable awareness education about the importance of water conservation, carrying out management efforts through reusing water that has been used, such as seeping it back into the soil through infiltration wells or building reservoirs. Utilization of rainwater during the rainy season is by filling distribution reservoirs to save on pump electricity usage, while plumbing systems that have not yet been implemented can be implemented in stages and carry out routine maintenance and upkeep, as well as in the procurement of new buildings, you need to pay attention to the plumbing system according to standards.
Ariesman, Musriwan, Sulkifli Herman, Rosmita, Juniar Copyright (c) 2024 Ariesman, Musriwan, Sulkifli Herman, Rosmita, Juniar https://creativecommons.org/licenses/by-sa/4.0 http://pakisjournal.com/index.php/jfmas/article/view/414 Sun, 30 Jun 2024 00:00:00 +0000 Evaluation of Good Manufacturing Practices (GMP) and Sanitation Standard Operating Procedures (SSOP) of UMKM on Salted Fish Processing in Pemangkat District http://pakisjournal.com/index.php/jfmas/article/view/391
Sintete Hamlet, Pemangkat District, Sambas Regency, is a location located in a village that can be said that almost all residents in the village have a fish-based processing production business. In the marine and fisheries sector, solid waste is often produced such as bones, shells, skin and fish heads. One example of a fishery product processing business is the production of amplang crackers, which not only have economic value, but also produce waste. Research on the amplang home industry in Kuala Village, Selakau District, Sambas Regency was carried out through field surveys and direct interviews with industry players. In the process of making amplang cracker, the initial stage begins with preparing the raw materials, weeding the mackerel fish, kneading, frying the amplang cracker. The resulting fish skin waste is reprocessed by drying it in the sun like salted fish, while the unprocessed waste is disposed of in landfills or usually directly through pipe disposal. The process of processing Amplang crackers generally does not produce a lot of waste. However, efficiency and cleanliness in the manufacturing process can still be improved. One effort that can be made is to create an SOP (Standard Operating Procedure) for processing amplang crackers and arrange the layout of the equipment used.
Astin Atasasih, Sri Vera Furwaningsih, Mentari, Nurizwan, Riky Alamsyah, Nuriqlima Aqilah Copyright (c) 2024 Astin Atasasih https://creativecommons.org/licenses/by-sa/4.0 http://pakisjournal.com/index.php/jfmas/article/view/388 Thu, 31 Oct 2024 00:00:00 +0000
